Our Roots

How it Started

It’s nearly impossible to get fresh, nutritionally dense food consistently. I realized doing it yourself is the only long term solution so I started growing microgreens.

I got interested in growing mushrooms and stumbled upon all the beneficial roles mushrooms (fungi) play in creating healthy soil. After learning how important fungi and other microbes are for healthy roots I started down the endless path of soil health.

Diving into the Microbiome

The name Mycore Farm comes from the word “Mycology” which is the study of fungi. The vast mycelium networks breakdown organic matter into vital nutrients for plant roots. Fungi also helps with disease suppression and improves the water retention of soil.

All our microgreens are grown in hand crafted soil rich in mycorrhizal fungi and saprobic fungi (oyster mushrooms). Mycorrhizal has a direct relationship with plant roots and saprobic fungi has indirect benefits.

Why Microgreens?

Mass agriculture has devastated our soil and finding nutritious food is proving more difficult everyday. A USDA study compared mature plants to microgreens by weight and found microgreens have about five times greater levels of vitamins and carotenoids.

This also means they are packed with flavor! Microgreens are a great way to fill the growing nutritional gap in our food supply and can be done locally at small scale.
