Why Should I Eat Microgreens?
When I first heard about microgreens I thought the idea was pretty strange. I was hesitant to give it a shot, stuck in the old mindsight of only fully matured plants. But there’s so much more! Microgreens, baby greens and dense trays of fresh herbs.
The first time I ate my own microgreens I was shocked at how much flavor they packed. I assumed tiny sprouts would be bland and not ideal for consumption. I couldn’t have been more wrong. I knew that flavor and nutrition go hand in hand so I was curious on how nutrient dense microgreens are.
A USDA study reported that microgreens can have up to 3-5 times more nutrients per gram than mature plants.
